“With this practical handbook, all you need to be able to do is hold a ladle and you’ll manage to muddle your way through”: this is the secret of cooking for all, of a democratic and widespread “art of good food”, of that little culinary revolution that Pellegrino Artusi triggered at the end of the 19th century. Published in 1891, at his own expense, the compendium immediately became an essential teaching element in the kitchens of the middle classes up and down Italy, making a far from marginal contribution to enhancing the unity not only of the country’s culinary talents but also its linguistic skills. In addition to the 790 recipes, taken from all parts of Italy, with a preference for home cooking – broth, gelatine and sauces, soups, bases, sauces, eggs, pasta and batter, filling, fried foods, etc… – the writing style used in the instructions and suggestions was sharp and witty, and the “technical” indications were enriched with interesting anecdotes and reflections. The public is introduced to the timeless appeal of his La scienza in cucina by Laila Tentoni who has been the life and soul of activities focused on Artusi for many years and is now chairwoman of the Casa Artusi Foundation, based in the town where the famous gastronome was born exactly two centuries ago. And where, just thirty years ago, Bevano Est, a band which continues to propose a refined blend of new and old, took shape, in the local School of Popular Music. Their music ranges from jazz to folk, from klezmer to swing, all constantly reviewed with fluidity and consistency.
